Imagine coming home after a long day on the beach, in the garden or at your desk, and relaxing over a lovely light and simple supper.
This delicious rice dish is ready in 20 minutes, all you need is a glass of chilled white while you’re cooking it!

Serves 2.
Low calorie cooking spray
2 spring onions, sliced diagonally
1 garlic clove, minced
1 tbsp red Thai curry paste
125g basmati rice
250ml hot fish stock
½ lime, zest and juice
150g cooked king prawns
Small pack of fresh coriander

Gently fry the spring onion in the low calorie cooking spray for 3-5 minutes. Add the garlic and red Thai curry paste, stir and cook for another minute.
Add the rice and mix well to coat. Add the fish stock and the lime zest and stir again. Cover and gently simmer until the rice is cooked and the stock absorbed.
Stir in the lime juice, coriander and prawns, warm through, season and serve.
