What a great breakfast! Whether you’re on holiday or at home this couldn’t be easier! It’s fun, filling and satisfying. Have them on their own, with toast or with the rest of the makings of a Full English.

Makes 6.
Low calorie cooking spray
6 lean rashers of bacon with all visible fat trimmed off
6 eggs
Seasoning
Preheat the oven to 180°C.
Spray a muffin tin with the low calorie spray.
Line each cup of the tin with the bacon to form a bowl and crack an egg into each one.

Bake in the oven for 12-18 minutes (this will vary depending on the size of you egg) or until the egg white is solid but the yolk is still runny.

Serve with a good grind of black pepper and salt to taste.
