Oh my! What a taste of summer this is!
Fresh, beautiful watermelon teamed up with delightfully salty grilled Halloumi and dressed in a balsamic glaze dressing.
Super easy to serve as a side dish with salads or alongside a barbecue or to pack up for a picnic.

Serves 6-8
500g watermelon, deseeded and cut into slices then chunks.
2 packs Halloumi cut into thick slices
2 tsp glaze balsamic vinegar
1 small bunch mint, leaves removed, rolled and roughly chopped
Seasoning
Grill the Halloumi under a hot grill or fry in a griddle pan in batches over a hot heat (or you can cook it on the barbecue). Leave to cool.
Arrange the slices of watermelon and slices of Halloumi on a serving dish, scatter over the chopped mint leaves and drizzle with the balsamic glaze.
Season with a good grind of black pepper and serve.
