Turkey & Apple Burgers

This recipe is a healthy spin on a fast-food favourite. Burgers can be really high in calories but this one has been adapted to make it a healthy option with still all the taste.

By using lean turkey mince instead of beef, it keeps the fat content down and losing the burger bun also helps, this burger is low calorie, high in fibre and 3 of your 5 a day.

Makes 4 generous burgers.

3 large sweet potatoes, about 650g, cut into wedges

500g lean turkey mince, 5 – 7% fat

1 onion, diced finely

½tsp lazy garlic

2 large eggs, beaten

1 apple, peeled and grated

3tsp dried mixed herbs

2tsp smoked paprika

Salt and black pepper

Green salad to serve

Method

Heat the oven to 180c, gas 4, 350f. Put the sweet potato wedges onto a large oven proof tray, spray with low – calorie cooking spray and cook for 25 minutes until golden brown, shaking them halfway through to make sure they are browned all over.

In a large bowl mix together the turkey mince, diced onion, lazy garlic, beaten eggs, grated apple, dried mixed herbs, smoked paprika and a bit of salt and black pepper.

Mix well, then divide into 4 large balls, slightly flatten them to make them look like burgers and place them onto a non – stick baking tray.

Place in the oven and cook for 10 minutes on each side until golden brown the thoroughly cooked.

Serve the burgers with the sweet potato wedges and a large green salad.
