Chicken Bacon and Bean Hotpot

This quick all-in-one tasty hotpot is full of flavour and very filling, make it ahead and re-heat it the next day for a quick dinner on a busy day..

Serves 4

4 medium chicken breasts, chopped into bite size pieces

6 back bacon rashers, visible fat removed, chopped

1 large red onion, chopped

2 large carrots, chopped

4 celery sticks, chopped

1tsp smoked paprika

500g passata

200ml chicken stock

1tbs Worcestershire sauce

1 x 400g can of cannellini beans, drained and rinsed

Fresh parsley, chopped

Salt and pepper

Method

Spray a non – stick saucepan with low – calorie cooking spray and place over a low heat.

Add the chicken and bacon and fry for 2 – 3 minutes until starting to brown. Add the onions, carrots, celery and stir to combine. Cover and cook for 10 minutes until the vegetables are soft.

Add the paprika, passata, stock and Worcestershire sauce, simmer for 20 minutes or until the sauce has reduced and thickened. Season with salt and pepper.

Stir the beans into the sauce and simmer for 5 minutes, then scatter with the chopped parsley.

Serve on its own or with a selection of vegetables.
