Quick and easy and full of Italian flavours. There’s not much more to say about this except………. bellissimo and deliziosa!! 🇮🇹

Serves 4.
450g tagliatelle
Low calories olive oil spray
2 garlic cloves, minced
2 courgettes, sliced thinly
2 carrots, sliced thinly
1 red onion, thinly sliced
2 tbsp tomato paste
2 (400g) cans chopped tomatoes
1 large roasted red pepper, sliced
6 sundried tomatoes, drained and sliced
1 tsp oregano
1/4 tsp chilli flakes
2 tbsp low fat cream cheese
Salt
Freshly ground black pepper
Sliced basil, for garnish
Freshly grated Parmesan, for garnish
In a large pot of boiling water, cook the tagliatelle according to package directions. Reserve a ladleful (about 240ml) of pasta water, then drain the rest off.
In a large pan over medium heat, heat the cooking spray add add the garlic and cook until fragrant; about 1 minute. Add the courgette, carrot, and red onion and cook until soft; about 7 minutes.
Stir in the tomato paste then add the chopped tomatoes and season with the oregano, chilli flakes, salt, and pepper, simmer for 10 minutes.
Add the tagliatelle to the pan and half of the reserved pasta water, stir through the cream cheese and toss to combine. Add more pasta water as necessary to bring the sauce together.

Garnish with basil and Parmesan to serve.
