Biscotti is so perfect to serve with coffee or ice cream but it also makes for a fabulous Gourmet Gift.

👩🏼🍳 Chef’s Note; This is such a versatile recipe to make as long as your quantities are the same you can swap and change the fruit and nuts that you use, I really like using pistachios and swapping the lemon for orange. A real taste of Italy.

Makes 30 – 40
250g plain four
250g golden caster sugar
2tsp baking powder
3 medium eggs
50g dried apricots, chopped
100g dried cranberries
75g walnuts, chopped
50g blanched almonds
50g shelled hazelnuts
Zest and juice of 1 lemon
½ tsp ground cinnamon

Method
Preheat the oven to 180c, gas 4, 350f
Mix all the ingredients by hand in a large bowl together.
Lightly flour the work surface and form into two sausage shapes
Place them onto lined baking trays, leaving a big gap in the middle and bake for 20 minutes.
Drop the oven temperature down to 120c, gas 1, 250f
Remove from the oven, carefully cut into thin slices using a serrated bread knife, line them up on the baking trays and pop them back into the oven for a further 10 – 15 minutes to crisp up.
Serve with ice cream, a cup of espresso or a cold glass of Limoncello.
