This really couldn’t be easier, perfect for a quick weekend supper when you’re busy having fun.

Serves 4
500g new potatoes, cut into wedges
Large bunch (about 15g) fresh sage, leaves only
Low calories cooking spray
200g Savoy cabbage or curly kale
4 salmon fillets
Preheat the oven to 220°C
Spray the baking tray with cooking spray, add the potato wedges and half of the sage and spray again and toss well to coat.
Bake for 20 minutes, turning occasionally, until lovely and browned.
Meanwhile, mix together the remaining sage and cabbage or kale. Spray and massage through the leaves. Spread over the potatoes and then top with the salmon.

Roast in the oven for 8-10 minutes, until the salmon is opaque.
Serve with a wedge of lemon and of course salt and vinegar!
