This quick, easy and tasty pasta dish will definitely be a family favourite. Pasta mixed with spicy chorizo sausage in a tomato and red onion sauce topped with basil and parmesan cheese.
This recipe reheats very well so could be made in advance and reheated when you come home from work.

Serves 4
200g penne or any pasta shape that you have
1 large red onion, chopped
Low – calorie cooking spray
220g chorizo sausage, skin removed and cut into chunks
400g can chopped tomatoes
400g can kidney bean, rinsed and drained
Small pack of fresh basil, torn up, and a few small leaves for garnish
50g parmesan cheese, grated

Method
Bring a large pan of salted water to the boil, add the pasta, give it a good stir, then cook for 1 minute less than the pack instructions, about 9 – 10 minutes.
Heat a large, lidded pan on a medium heat, spray with the low – calorie cooking spray, add the chopped red onion and cook for 5 minutes until soft. Add the chorizo sausage and cook for 5 minutes until the oils have been released.
Add the tinned tomatoes and kidney beans, stir to combine, add some salt and black pepper and leave to bubble away for 5 minutes.
Drain the pasta and add it to the tomato sauce, stir gently, add the torn basil leaves, stir again.
Place in a warmed serving dish, sprinkle over the grated parmesan and a few small basil leaves to garnish.
Serve with a green salad and crusty bread if desired.
