This delicious, speedy pâté can be made 2 ways (see Chef’s Note below) and makes a great easy lunch but it’s ‘fancy’ enough to serve as a starter.

Serves 4-6.
200g smoked mackerel fillets
150g low fat cream cheese
100g low fat creme fraiche
3 small pickled gherkins, chopped plus extra to serve
Small handful of dill, finely chopped
Skin the mackerel fillets and remove any bones then flake into the bowl of a food processor.
Add the cream cheese, creme fraiche and the 3 gherkins then pulse until you have a smooth consistency.
Add the dill and stir through. Serve with corn cakes, rice cakes, crackers or toast.
👩🏼🍳 Chef’s Note; if you prefer a courser pâté add only ¾ of the fish to the processor and finely hand chop the gherkins. Add the remaining fish (well flaked) and the gherkins after the rest has been processed. Stir through with the dill.
