Mediterranean Mini Wraps

Beautiful Mediterranean flavours all wrapped up in a mini wrap.

I wanted something easy and delicious for lunch and this really hit the spot! the hummus holds it all together and wonderfully blends the flavours together.

Pop the salad in an airtight container and assemble it at your desk for a delicious working lunch.

Makes 4 small mini wraps.

For the salad
1tbsp red wine vinegar
1tsp olive oil
Seasoning to taste
⅓ small red onion, finely sliced (use a mandolin if possible)
100g cucumber, finely diced
100g cherry plum tomatoes, halved
25g pepperdews, chopped
100g cooked chicken breasts, cut into bite sized chunks or shredded
50g jar artichoke hearts, drained and sliced
25g pitted black olives, chopped
25g feta cheese, crumbled

To assemble
Small bag of salad leaves
4 mini wraps
4 tbsp hummus
1 tbsp capers

In a large bowl mix the red wine vinegar, olive oil and seasoning and stir through the sliced onion.

Add the rest of the salad ingredients and stir well to combine.

When you’re ready to assemble, spread 1 tbsp of hummus over each mini wrap, arrange a layer of salad leaves and pile the salad on top and scatter a few capers over the top.

To eat, wrap up like a taco and enjoy!! (or eat with a knife and fork if you need to keep your hands clean 😜)
