Creamy Orzo & Butternut One Pot

If food could be hygge then this certainly would be! Cosy comfort food at its very best.

Serves 4.

Low calories cooking spray
500g butternut squash, chopped into small chunks
Seasoning to taste

1 onion, finely chopped
2 cloves garlic, crushed
Small bunch of sage leaves
300g orzo
600ml vegetable stock plus another 250ml if needed
100g kale, sliced
50g freshly grated Parmesan


Instructions

Preheat oven to 200C/400F.   

Arrange the butternut squash on a baking tray, spray with low calorie cooking spray, season with salt and pepper and toss well. Scatter over half the sage leaves and roast at 200°C for 40 minutes or until golden, tossing halfway through.

🧑🏼‍🍳 Chef’s Note; Roast the butternut squash on baking parchment/paper. That way you’ll be able to use all the delicious caramelised bits. 

Halfway through the cooking time, spray a deep pan with low calorie cooking spray and sauté the onion, garlic and remaining sage leaves over low heat for 2-3 minutes.

Add vegetables stock, salt and kale, bring to a boil, add orzo and cook according to package instructions for approximately 7-8 minutes until tender but still al dente.

Continue stirring the pan as it cooks to stop it from sticking to the bottom of the pan.

Add the extra stock if it starts to thicken too much.

Take off the heat and stir through most of the Parmesan and all of the butternut squash. Season to taste and top with the rest of the Parmesan and the remaining sage.
