Whenever I make meatloaf I wonder why I don’t do it more often. It’s so easy to make and everyone loves it. Serve it for dinner with a jacket potato or new potatoes with a salad or greens and make sure you save some for lunchboxes the next day.

For the meatloaf;
500g low fat minced beef
500g turkey mince
1 small to medium sized onion chopped
2-3 cloves fresh garlic minced or pressed
1 egg
75g porridge oats
1 tbsp ketchup sauce
1 tbsp mango chutney
1 tbsp dark soy sauce
1 tbsp sweet chilli sauce
1 tsp salt
½ tsp freshly ground black pepper
For the glaze;
90g ketchup
90g mango chutney
Preheat the oven to 180°C (fan 170°C).
Mix all the ingredients for the meatloaf in a big bowl. You can use a spoon but personally I find mixing by hand to be much more effective (and satisfying!!).
Press the mixture into a large loaf tin and bake in the oven for 55 minutes.
Meanwhile mix the glaze together and after the cooking time, take the meatloaf out and apply the glaze.
Return to the oven and cook for another 20 minutes.
Leave to ‘rest’ for 10 minutes before removing from the tin and slicing.
