The trick to this lovely, light salad is to cut everything up evenly and nice and small. Serve it on apple slices or in a lettuce wrap or just munch it with a fork.

Serves 2.
125g cooked chicken, chopped into small pieces
40g dried cranberries, chop any large ones in two
10g chopped roasted pecans, chopped
50g celery, chopped
2 tbsp fat free Greek yogurt
1 tbsp light mayonnaise
½ to 1 tsp medium curry powder (depending on your taste)
Seasoning to taste
2 apples, sliced thinly

In a bowl mix the yogurt, mayonnaise and curry powder.
Add all of the other ingredients (apart from the apples) and stir well to combine. Season to taste.
Serve on the sliced apples or pack in an airtight container and take to work for a healthy working lunch.
