I have to admit that I’m not a great fan of raw onion. So when a recipe calls for slices of raw red onion, and the appearance of the dish really needs that pop of colour, I add these.
They’re super quick to make (but do improve with time) and super yummy to eat;

1 large red onion
½ cup water
1 cup apple cider vinegar
1 tablespoon sugar
1½ teaspoons salt
Slice the onion as finely as possible, using a mandolin if possible, and pack into a clean jar.
Add all the other ingredients to a small pan and warm to dissolve the sugar and salt. Bring to the boil and simmer for about 2 minutes.
Carefully pour over the onions until they’re completely covered and seal the jar.
Let them sit for an hour before using but if you can make them in advance then they’ll be even more delicious.
I usually make up several batches as they’ll last for up to 3 months in the fridge.
