The mixture of herbs and spices in these bite – sized turkey balls ensures that each one just bursts with flavour.
Fantastic to serve as a lunch with wholemeal wraps filled with crisp green salad or for parties on a cocktail stick. If you prefer you could replace the turkey with chicken or lamb.

Serve with a spicy light mayo dressing or sweet chilli dipping sauce.
Serves 4 or makes 16 bites
4 spring onions, trimmed and very finely chopped
½ tsp lazy garlic
½ tsp lazy chilli
500g lean turkey mince
1 tsp ground ginger
1 tsp ground cumin
1 tsp ground coriander
2 tbs very finely chopped fresh mint
2 tbs very finely chopped fresh parsley
2 tbs very finely chopped fresh coriander
Salt and black pepper

To serve
Lime wedges, spicy light mayo dressing or sweet chilli dipping sauce.

Method
Place the spring onions, garlic, chilli, turkey mince, ground spices and chopped herbs in a mixing bowl. Season with salt and black pepper. Using your fingers, mix thoroughly. Cover and chill for 3 – 4 hours.
Preheat the oven to 200c, gas 6, 400f, line a large baking tray with non – stick baking parchment.
Divide the mixture into 16 portions and then shape each portion into a ball. Place the balls on the prepared baking tray and place in the oven for 20 minutes or until cooked through. Remove from the oven and serve hot.
