Slow Cooked Pork Tenderloin

My slow cooker is on overdrive at this time of year (I have been know to use 3 cookers at once), and this recipe is just perfect to put on before work or while you’re out on a winter walk or even while doing a garden tidy up. Come back in to a delicious, warning dinner that will keep everyone happy.

The gravy is the crowning glory and is ready to serve or can be thickened depending on your preferences.

Serves 4.

1 pork tenderloin (approx 500g)
1 apple, sliced
2 tbsp honey
1 tbsp cinnamon
1 onion, sliced (I used a mandolin)
100ml apple juice
200ml vegetable stock

1 tsp – 1 tbsp cornflour (optional see Chef’s Note)

This couldn’t be easier!!

Slice into the tenderloin (about ¾ through). Into each slice push a slice of apple, skin side up, then drizzle the honey right over the top and sprinkle with the cinnamon.

Pop the tenderloin into the slow cooker and scatter the onions and remaining apple over the top.

Pour in the apple juice and stock (try not to wash off the honey and cinnamon) and cook on high for 5 to 6 hours or on low for 7 to 8 hours.

👩🏼‍🍳 Chef’s Note; If you want to think thicken your gravy, mix the cornflour (quantity will depend on the consistency) with some of the gravy and return to the slow cooker for the last half hour.

Serve with mashed sweet potatoes, greens and a ‘dollop’ of apple sauce.
