Spicy Beef and Crispy Potatoes

Delicious lean and healthy minced beef cooked with tomatoes, rose harissa and red onion marmalade. Serve over crispy oven roasted red onions and chunks of potato to make this a quick and tasty midweek family meal.

Serves 4.

Low – calorie cooking spray

600g potatoes, cut into rough chunks

2 red onions, cut into wedges

500g 5% lean mince beef

400g tin chopped tomatoes

1tbs rose harissa

1tbs red onion marmalade

200g reduced fat feta cheese, cut into small cubes

2tbs mix of fresh mint, parsley, and coriander, chopped

Method

Heat the oven to 180c, gas 4, 350f

Spray the low – calorie cooking spray into a medium sized oven roasting tin. Add the onion wedges and potatoes, and roast for 25 – 30 minutes or until golden brown and crispy turning occasionally.

Meanwhile, heat a large, lidded saucepan on a medium heat, spray with low – calorie cooking spray, add the mince beef and cook until golden brown, add the rose harissa, red onion marmalade and salt and black pepper. Add the tinned tomatoes and 150ml of water. Bring to the boil then reduce the heat to a simmer and cook gently for 20 – 25 minutes.

When the onions and potatoes are cooked, spoon over the mince mixture, sprinkle over the feta cheese cubes and return to the oven for 10 minutes until bubbling.

Sprinkle with the fresh herbs and serve with garden peas or a green salad.

🧑🏼‍🍳 Chef’s Note 1: Always rinse out your tinned tomato tins with your water or stock so you don’t waste any of the flavour.
🧑🏼‍🍳 Chef’s Note 2: The mince mixture can be made and cooked in advance, then just roast the potatoes and onions, reheat the mince, brown in the oven and serve.
