Make these ahead for a quick breakfast or for a grab-and-go option.
They’re also rather delicious served warm with yogurt and a sprinkling of cinnamon.

Makes 12 muffins.
Low calorie cooking spray
225g jumbo oats1 tsp baking powder½ tsp ground cinnamon¼ tsp salt2 mashed bananas
180ml skimmed milk
85g honey1 large egg
1 tsp vanilla extract
Preheat oven to 180°C
Spray each well (12) of a muffin pan well with the cooking spray.
In a large mixing bowl, mix together the jumbo oats, baking powder, ground cinnamon and salt.
In a separate large mixing bowl, whisk together the mashed banana, milk, honey, egg, and vanilla extract until fully combined.
Add the dry ingredients to the wet ingredients and mix until well combined.
Spoon into the muffin pan and bake for 20-25 minutes or until the tops of the oatmeal cups are nicely browned and firm.
Remove from the oven and allow to cool for 10 minutes in the muffin pan. Then, carefully remove the oatmeal cups from the pan and transfer to a wire rack to cool.
