Egg Wrapped Salmon

Oh this was delightful! You know those mornings when you want something filling but you also know that if you dive into the fridge now you’ll never get out of it all day? Well today was one of those!

But this smoked salmon wrap delivered all the flavour and all the protein to keep me happy until lunch but also kept my dieting halo in place!!!

Serves 1.

2 eggs, lightly beaten with..
1 tsp dried dill and season.

Low calorie cooking spray
1 tbsp low fat or lighter soft cheese (I used ‘Garlic and Herbs’)
2 slices smoked salmon
Salad leaves

In a good non stick pan heat the cooking spray over a low heat. Gently pour in the eggs and dill to cover the entire surface of the pan and leave to slowly cook through.

👩🏼‍🍳 Chef’s Note; You can brown the top side under the grill if it’s not cooking through quickly enough.

Once cooked remove from the pan and allow to slightly cool.

Spread the soft cheese over the wrap and add the salad leaves and slices of smoked salmon.

Roll up and enjoy.
