Fig & Feta Corn Cakes

Need some inspiration for lunch? Try these Corn Cakes (or Rice Cakes will work just as well).

Serves 2.

1 tsp tahini
2 tbsp fat free greek yogurt
2 fresh figs
30g low fat feta cheese
4 corn cakes (or rice cakes)
Fresh thyme

Whisk the tahini with the yogurt until smooth. Divide between the 4 corn cakes.

Slice the figs into thin wedges and arrange on top of the tahini mix.

Scatter the feta over the top and sprinkle with fresh thyme leaves.
