Cold mornings deserve a warming breakfast like this. It’s quick to put together and can be cooking while you get ready for the day.

Serves 2-3
100g porridge oats
1 tsp baking powder
1 tbsp runny honey or maple syrup
1 orange, zested
2 eggs
1 banana, peeled and mashed
Low calorie cooking spray to grease the baking dish
100g blackberries, fresh or frozen
Fat free yogurt to serve
Heat the oven to 180°C.
Put the oats in a large bowl and add the rest of the ingredients apart from the blackberries.
Mix well until fully combined.
Spray a baking dish lightly with cooking spray and tip in the porridge mix.
Arrange the blackberries on top, pushing them lightly into the mix. Don’t worry if you don’t use all the blackberries, serve any left over with the baked oats.
Bake for 25 – 30 minutes or until the oats are golden brown and risen, and a skewer comes out clean.
Serve with fat free yogurt and any left over blackberries.
