Tender strips of chicken breasts covered in fat – free natural yogurt, garlic, fresh thyme then generously coated in crushed up Weetabix then baked in the oven until golden and crispy.

Serves 4
4 boneless and skinless chicken breasts
250g fat free natural yogurt
Few sprigs of fresh thyme
1tsp lazy garlic
Salt and black pepper
8 Weetabix
Fresh parsley, chopped to sprinkle

Method
Preheat the oven to 200c, gas 6, 400f
Tidy up the chicken breasts and cut each one into 3 pieces length ways and place in a wide topped bowl.
Mix the natural yogurt, garlic, fresh thyme, salt, and black pepper in another bowl
And finally crush up the Weetabix to complete your breading station.

Tip the yogurt onto the chicken breasts and mix together to thoroughly coat them.
Then roll the coated chicken in the crushed-up Weetabix.

Spray two non – stick baking trays with the low – calorie spray, place the chicken pieces onto the trays and bake for 10 minutes in the preheated oven, after the 10 minutes remove the chicken pieces, turn them over to cook the other sides. Return to the oven for a further 10 minutes until golden brown and crispy.

Place in a serving dish, sprinkle with the chopped parsley and serve with new potatoes and green salad.
