This is too simple really to need a recipe but it’s a bit of a different take on new potatoes that’s really fresh and delicious.

Serves 4
500g new potatoes, scrubbed and cut in half
Low calorie cooking spray (I used the buttery one)
3 spring onions, slices
180g frozen peas, blanched
Small bunch of fresh mint, finely chopped.
Seasoning to taste
Cook the new potatoes in salted water for about 15 minutes until tender. Drain and keep warm.
Spray a non stick pan with the cooking spray and ‘fry’ the spring onions until they start to colour and caramelise. Add the peas and most of the mint to the pan and warm through with the onions. The heat will release the mint flavour.
Add the peas/mint/spring-onion mix to the potatoes and stir through, season well and serve with the reserved mint sprinkled on top.
