Gammon & Cauliflower Grills

Delicious as a light summer lunch or stress free entertaining.

Serves 4

4 Gammon Steaks

1 Large Cauliflower, cut into florets

1 tbs wholegrain mustard

100ml half-fat crème fraiche

85gms Low fat cheddar cheese, grated

Set the oven to 200c / gas 6/ 180c fan

With scissors snip the sides of the gammon streaks to stop them from curling up in the oven.

Place them on a non-stick baking tray and place in the preheated oven for 10 minutes.

Meanwhile cook the cauliflower in boiling water for 5 minutes until tender but not mushy, drain well.

Mix the mustard, crème fraiche, and 2/3rds of the grated cheddar, add the cauliflower and mix well.

Remove the gammon steaks from the oven and turn over on the baking tray and pop back in the oven for a further 5 minutes.

After the 5 minutes remove the gammon from the oven and top with cauliflower mixture sprinkle with the remaining grated cheese and pop back in the oven for a further 10 minutes or until golden brown and bubbling.

Serve with a crisp green salad and boiled new potatoes.
