Cornbread

So the story behind this is Corona related; I ordered Polenta for my grocery delivery and due to all kinds of weird shortages they delivered as a substitute a HUGE bag of corn maize, and I mean HUGE!!

So what do I do with corn maize??? Never used it before! But after making this, I know that I’ll be using it again!! And probably many different versions if it too (that of course I’ll share!) It’s so easy and so delicious!!

170g cornmeal

170g plain flour

50g sugar

4 teaspoons baking powder

2 large eggs

240ml skimmed milk (can be substituted with any milk

50g low fat margarine spread, melted

100g shredded sharp cheddar cheese

3 tablespoons minced chives

In a large bowl, combine cornmeal, flour, sugar and baking powder.

In another bowl, whisk the eggs, milk and butter.

Stir into dry ingredients just until moistened then gently fold in the cheese and chives.

Pour into a greased 20cm x 26cm baking pan (anything near this size will do). Bake at 200°C until golden brown, about 18 minutes. Cut into strips; serve warm.
