Sloppy Joe Wraps

These sloppy Joe wraps are everything you could wish for in this crowd – pleasing style sandwich, which could be served in a bun if you prefer. A rich meaty filling smothered in tangy tomato sauce that just refuses to stay in the wrap, you definitely need a knife, fork and plenty of napkins to eat this mouth watering meal.

I served mine with healthy fries and a sprinkle of salt.

Serves 4

Low-calorie spray

1 large onion, chopped

500g 5% lean mince beef

Salt and freshly ground black pepper

1 tsp lazy garlic

½ tsp lazy chilli

2tbs tomato puree

3tbs tomato ketchup

1tsp wholegrain mustard

1 beef stock cube, crumbled

1 green pepper, de-seeded and chopped

1tbs Worcestershire sauce

4 wheat or seeded wraps

4 large clean jacket potatoes, cut into fries

Shredded crunchy lettuce, diced tomatoes, and chopped red onion

Method

Preheat the oven to 200c,gas 6,400f

Spray a large frying pan with the low-calorie spray, add the onion and cook for 5 minutes until soft, then add the mince, garlic and salt and pepper. Cook on a medium heat for 5 minutes, breaking up the meat with a wooden spoon.

When the meat is cooked add the tomato puree, ketchup, mustard and crumbled stock cube. Add 200ml of boiling water, stir in the green pepper and simmer for 10minutes until the mixture has thickened but is still juicy. Stir in the Worcestershire sauce.

Spray a large oven proof pan spray with low-calorie spray and place the fries in the oven for 15 minutes, give them a bit of a shake to move them around, then place back in the oven for another 15 minutes until golden brown.

Warm the wraps in the oven, wrapped in foil for a few minutes or pop in the microwave for 1 minute to warm through,

Place the warmed wrap on a plate put the sloppy joe mince mixture down the centre of the wrap, top with the lettuce, tomatoes, and chopped onion and carefully roll up.

Serve with healthy fries, green salad and a spicy tomato chutney for dipping.
