Salmon, Tomato and Red Onion Pasta Salad

This tasty, quick and versatile pasta salad is great for a quick lunch either at home or to take to work.

I always have cold cooked pasta in my fridge, so when I come home for lunch it makes a great shortcut and saves a lot of time.

The combination of salmon tomato and sweet red onion is great together and is one of my lunch time favourites.

Serves 1

150g cooked pasta shapes, cooled and dried as excess moisture will make the sauce watery.

110g pack of oak roasted salmon flakes

6 cherry tomatoes, chopped

½ small red onion, chopped

1tbs low fat mayonnaise

1tbs chilli and tomato chutney, my favourite is English Provender

Freshy ground black pepper

Method

Mix the mayonnaise, chutney and freshly ground black pepper.

In a bowl carefully mix together the pasta, tomatoes, onion and salmon into the mayonnaise mixture and place into a serving bowl.

And its as simple as that.

If possible, chill in the fridge for a few minutes or overnight if you are making this the night before.
