This rich tasty autumnal traybake is really delicious and colourful and a great way to use up vegetables that we might have sitting in the fridge.
This recipe is so versatile that if there was a vegetable that you did not really like you could easily swap it for something else.

Serves 4
6 lean loin pork chops
1 red pepper, deseeded and sliced
1 large onion, sliced
1 large courgette, chopped into long chunks
1 eating apple, cored and sliced
1tsp paprika
Small bunch of fresh parsley, chopped
Salt and freshly ground black pepper
Method
Preheat the oven to 200c, gas 6, 400f
On a large non – stick baking tray or dish scatter half the red pepper, sliced onion, courgette chunks, and apple, then place the pork chops on top, sprinkle with the paprika, salt and pepper.
Then sprinkle over the remaining red pepper, sliced onion, courgette chunks and apple then place in the oven for 30 minutes until everything is cooked and golden brown.
Sprinkle over the fresh chopped parsley and serve with roast or mash potatoes and vegetables.
