Ready for Date Night? This dinner is perfect; quick, tasty, spicy and filling and a great for a romantic dinner for 2!
Lean mince, delicious rice, colourful green beans and red peppers all come together with flavourful herbs and spices.

Serves 2
150g basmati rice
300ml boiling water
¼ tsp salt
100g green beans, trimmed and cut into thirds
1 red pepper, de-seeded and sliced
1 lime, zested and juiced
1tsp lazy ginger, chopped
½ tsp lazy garlic
1 small bunch fresh coriander, washed and chopped, (you can also use the stalks)
Low – calorie cooking spray
240g lean mince beef
1tsp Chinese five – spice
1tsp dark soy sauce
2tbs hoisin sauce
1tsp sugar

Method
Cook the rice in the boiling water with the salt, on a medium heat for 10 minutes with the lid on, remove from the heat, keep the lid on and leave for another 10 minutes, the rice will finish cooking in its own steam.
Spray a large non – stick frying pan with the low – calorie spray, add the mince and Chinese five spice and stir fry until browned, this will take about 6 – 8 minutes. Remove the mince, put it on a plate and set to one side.
Using the same pan, spray with some more low – calorie spray, add the pepper, green beans and a small splash of water to help them cook. Stir fry for 4 – 5 minutes until tender, stir in the ginger and garlic, cook for 1 minute, stir in the soy sauce, hoisin sauce and sugar.
Add the mince back into the pan and gently stir in the cooked rice. Toss to combine and continue to cook for 2 – 3 minutes until piping hot, once hot stir in the lime zest and juice from half the lime and half of the coriander. Divine the fried rice between two bowls served sprinkled with the rest of the coriander and a lime wedge on the side to squeeze over.
