This moist but light cake has a super crunchy topping of granulated sugar, lovely with a cup of tea or a dollop of vanilla ice-cream.
an easy and quick cake ideal to make for unexpected guests or for children to have a go at, they will not be disappointed.

Makes 10 pieces
170g butter, melted
1tsp vanilla extract
170g caster sugar
225g self – raising flour
25g cocoa
1 large egg
2tbs granulated sugar

Method
Heat the oven to 180c, gas 4, 350f
Grease a 20cms x 20cms square brownie tin and line with non – stick baking paper.
Stir the melted butter and vanilla extract together in a medium bowl.
In a large bowl sift together the flour, caster sugar and cocoa.
Pour the wet ingredients into the dry, and mix, then add the egg and mix together again until combined.
Press the mixture into the prepared tin, brush the top with water and sprinkle over the granulated sugar.
Bake for 30 – 35 minutes, leave to cool for 5 minutes in the tin then turn out onto a cooling rack, cook completely and cut into 10 slices.
