Slow Cooker Meatball Linguine

Yummy!!! This was absolutely scrumptious and so very easy to do. The sauce is rich and delicious and would work well with any other meats too.

Cooking spray
340g pack of low fat or reduced fat meatballs (or make your own)
1 large onion, finely chopped
2 cloves garlic, crushed
8 sun dried tomatoes, roughly chopped
1tsp dried mixed herbs or oregano
2 x 400g tins chopped tomatoes
1tbsp balsamic vinegar
500g linguine
Shaved Parmesan and basil leaves, to garnish

Spray a large, nonstick frying pan with cooking spray and fry the meatballs over a medium heat for 5 mins until starting to colour. Remove from the pan and put into the slow cooker.

Add the onion to the pan and fry for 4 mins until soft but not coloured, add the garlic and fry for another minute.

Add the sun-dried tomatoes, mixed herbs, chopped tomatoes and balsamic vinegar to the pan and bring to the boil.

Transfer to the slow cooker, stir through the meatballs and cover and cook on low for 4 hrs.

Turn the slow cooker up to high then add the linguine, carefully submerging it completely in the tomato sauce and stir to make sure it’s all separated. (You may need to add a little extra boiling water). Cover and cook for 10-15 mins or until the pasta is cooked through.

Divide between 4 bowls and top with the shaved Parmesan, basil leaves and a good grind of black pepper to serve.
