This recipe is pure comfort food on a cold day, lean mince and vegetables in a rich delicious gravy topped with crispy pieces of potato and sprinkled with fresh parsley.

Serves 6
1kg new potatoes, quartered
Low -calorie cooking spray
Salt and freshly ground black pepper
2 onions, finely chopped
3 carrots, finely chopped
2 celery sticks, finely chopped
800g lean 5 % mince beef
4tbs flour
550ml beef stock
3tbs Worcestershire sauce
Small bunch fresh parsley, chopped

Method
Preheat the oven to 200c, gas 6, 400f
Spread the potatoes over a large baking sheet, spray with the low – calories cooking spray, sprinkle with salt and pepper, then roast on a high shelf in the oven for 25 – 30 minutes until golden.
Spray a large non – stick oven proof casserole dish with low – calories cooking spray add the onions, carrots and celery for 5 minutes until soft, add the mince beef and cook for a further 5 minutes or until brown.
Stir in the flour, stock and Worcestershire sauce, stir to combine.
Place in the oven, uncovered for 15 – 20 minutes.
Remove the potatoes and the mince from the oven, toss the potatoes with the parsley, scatter over the top of the mince and serve.
• For a great make ahead version, you could roast the potatoes and cook the mince up to 2 days ahead, the heat through and assemble to serve.
• You could try a lighter version with half pork and half beef mince or replace half the meat with a 400g tin of drained and rinsed lentils.
