Pesto Orzo in Una Tazza

Hey! we’ve all tried mug cakes but what about mug lunches? Pesto Orzo in Una Tazza (that’s Italian for ‘in a mug’!) is so simple and so delicious you’ll make it again and again.

Serves 1.

4 tbsp orzo pasta
150ml boiling water
1 tbsp pesto (red or green)
2 sundried tomatoes, cut into small pieces
Approx 1/5 low-fat mozzarella ball, torn into small pieces or 4-5 mini mozzarella balls
1 tbsp capers
4-5 fresh basil leaves, torn
Handful of rocket leaves
1/2 tbsp toasted pine nuts

Put the orzo in a mug with half of the water and microwave on high for 1:30 minutes. Take out and stir to break up the pasta.

Top up with the rest of the water and microwave again for 1:30 minutes. Stir to break up the pasta and leave to stand for 1 minute.

Stir through the pesto, mozzarella, capers and sundried tomatoes. Leave to stand for another minute.

Stir through the rocket, sprinkle the pine nuts on top and enjoy!

👩🏼‍🍳 Chef’s Note; All microwaves vary so adjust cooking times accordingly. But make sure you cook and beat, cook and beat to stop the eggs from being rubbery.
