Chicken Tagine

Tender chunks of lean chicken, warming spices, dried apricots and raisins add a classic sweetness to this very quick and easy subtly-spiced tagine.

Serves 4.

Low – calorie cooking spray

650g chicken breasts, cut into large chunks

1 tsp ground cumin

1 tsp ground coriander

1 tsp ground cinnamon

1 tsp paprika

75g dried apricots

40g raisins

400g tin chopped tomatoes

Salt and pepper

75g couscous

Large handful fresh coriander, chopped

Method

Heat a large, lidded saucepan over a medium heat, spray with low – calorie cooking spray.

Brown the chicken pieces until brown all over about 10 minutes.

Add the spices and stir to combine and cook for 1 – 2 minutes.

Add the apricots, raisins, tomatoes, 400ml water and some salt and pepper

Simmer for 30 minutes.

Stir in the couscous and simmer for a further 5 minutes, until the couscous is tender and the chicken is cooked through.

Sprinkle with the chopped coriander and serve immediately.
