Who doesn’t love pancakes? This one is super simple to make and any leftovers are great served with ice cream for dessert!

Serves 6.
Nonstick cooking spray
300g plain flour
3 tablespoons granulated sugar (or sweetener to taste)
1 tablespoon baking powder
¼ teaspoon salt
¼ teaspoon ground cinnamon
500ml buttermilk
2 large eggs
½ teaspoon pure vanilla extract
2 peaches, pitted and sliced
200g sliced strawberries
Icing sugar and maple syrup, for serving (optional)
Preheat the oven to 180°C.
Line a baking sheet with parchment paper and spray the paper and the sides of the pan with nonstick spray.
In a large bowl, whisk together the flour, sugar, baking powder, salt and cinnamon. Whisk in the buttermilk, eggs and vanilla.
Pour the batter into the baking sheet and spread into an even layer. Arrange the peaches and strawberries across the top.

Bake until the pancake springs back slightly when touched in the centre, 12 to 15 minutes.

Sprinkle the pancake with icing sugar, slice into squares and serve with maple syrup.
