This super tasty and quick recipe will be a real crowd pleaser. Tender pork loin chops, onions, apples, all cooked together in a sweet and sticky sauce and served with delicious crispy onion rice.

Serves 4
600g Pork Loin, visible fat removed
Low – calorie cooking spray
2 red onions, peeled and chopped
2 red eating apples, cored and cut into 8 wedges
½ tsp lazy garlic
2 tbs golden syrup
1 tbs red wine vinegar
1 tbs Dijon mustard
2 tbs red onion marmalade
Crispy Onion Rice
200gms basmati rice
1 chicken stock cube, crumbled
Low- calorie cooking spray
2 onions, thinly sliced

Method
Preheat the oven to 200c, gas 6, 400f
Heat a large, lidded frying pan over a medium heat, spray with the low – calorie cooking spray.
Add the pork loin steaks and cook for 5 minutes on each side until golden brown, remove from the pan and set aside.
Add the apple wedges and chopped red onion to the pork pan and cook gently until the apple wedges are golden brown and the red onion is soft.
Spray an oven proof baking tray with low – calorie cooking spray, scatter in the thinly sliced onions and cook I the oven for 10 – 15 minutes until golden brown and crispy, remove when cooked and set aside.
Whilst the pork is cooking prepare your rice, put the rice in a pan and cover with cold water add the stock cube, bring to the boil, stir, then simmer for 10 minutes until the water has almost evaporated. Put a lid on and leave for 5 minutes, then fluff up with a fork.
Stir in the garlic, golden syrup, red wine vinegar, Dijon mustard, red onion marmalade and 3 tbs of water and bring to the boil.
Return the pork to the pan along with any juices and simmer for 5 minutes stirring gently until the pork is cooked through and the sauce is sticky and thickened.
Fold the oven baked crispy onions into the rice and serve warm with the pork.
