Coriander and Lime Rice Pilaf

Rice is such a satisfying store cupboard staple and you can dress it up in so many ways. This rice pilaf has a gorgeous combination of onions, chilli, fresh lime and coriander, a delicious rice dish which is extremely easy to make and is an amazing side dish for any curry, stroganoff, or your favourite spicy casserole.

I am sure you will love it as much as I do and will use it again and again.

Serves 4

Low-calorie spray

350gms of white long grain or white basmati rice

1 large onion, chopped

600ml of chicken stock made with water and a chicken stock cube

½ tsp lazy chilli

3tbs fresh parsley, chopped

3tbs fresh coriander, chopped

2 limes, zest and juice

Salt and freshly ground black pepper

Method

Spray a non-stick lidded saucepan with the low-calorie spray, add the chopped onion and gently cook for 5 minutes without browning them, which will take about 5 minutes.

Add the lazy chilli, rice, salt and pepper and stock, bring to the boil, stir once, put on the lid reduce the heat to low and leave to cook for 10 minutes.

Turn off the heat and leave the rice to steam for a further 5 minutes, without lifting the lid. Uncover the rice, fluff up the grains with a fork and stir in the herbs, lime zest and juice.
