Slow Cooked Chilli Beef

This recipe is a real full-of-flavour dinner; tender chunks of melt-in-the-mouth beef coated in sticky, lightly spiced sauce, perfect for when you need a warming dinner which feels indulgent but is not packed with calories.

We served out with our Lime and Coriander Rice and vegetables.

Serves 4.

1kg lean beef braising steak, cut into cubes

2tbs cornflour

2tsp lazy ginger

1tsp lazy garlic

½ tsp lazy chilli

150ml low salt soy sauce

2tbs granulated sweetener

1 bunch of spring onions, chopped

500ml water

2 large carrots, grated

10g sesame seeds

¼ red chilli, sliced

Coriander leaves to garnish

Method

Preheat the oven to 170c, gas 3, 325f.

Place the beef cubes and cornflour in a bowl and mix well.

Add the ginger, garlic, chilli, soy sauce, sweetener, spring onions, water and carrot to the beef.

Mix well then transfer to a large lidded ovenproof dish, I used my le cruset.

Cook in the oven low and slow for 3 hours until the beef is tender, and the sauce is thick.

Serve sprinkled with the sesame seeds, sliced red chilli and coriander leaves.

We enjoyed ours with the Lime Coriander Rice and Vegetables.
