This is a delicious combination of rich mince beef, peas, and spices to make a classic Indian favourite.

Serves 4
Low-calorie spray
2 onions, finely chopped
750g lean mince beef, 5% or less
1tsp of lazy ginger
1/2tsp lazy chilli
1 tsp of lazy garlic
2tbs medium curry powder, depending on your taste
6tbs tomato puree
1 tsp ground cinnamon
200ml chicken stock
500g passata
300gms frozen peas
2tbs fresh coriander, roughly chopped
Salt and Freshly ground black pepper
Fresh lime wedges to serve
Sliced red onion tossed in lime juice to serve
Method
Spray a wide non-stick saucepan with low-calorie spray and place over a high heat.
Add the onion and mince and stir fry for 4 – 5 minutes. Drain off any liquid in the pan.
Add the ginger, chilli, garlic and curry powder and stir fry for 1 minute the add the tomato puree, ground cinnamon, stock and passata.
Mix well, bring to the boil and cook over a medium heat for 15 – 20 minutes until cooked.
Add the peas, return to the boil and cook for 3 – 4 minutes or until the peas are tender.
Remove from the heat, stir in the coriander and check the salt and freshly ground black pepper.

Scatter over any remaining fresh coriander, and serve hot with lime wedges, sliced red onions and Coriander Lime Rice.
